Our dishes include a wide selection of customer favourites such as Soba, Sushi, Karaage, Tempura, Japanese Curry and Bento – items that traditionally contain wheat flour, soy sauce with gluten, or other common allergens. By carefully reworking recipes and sourcing premium allergen-friendly ingredients, we have created a menu that is safe, inclusive, and equally delicious.

A TRADITION ROOTED IN AUTHENTIC SOBA MAKING
Our story began in 1988, when Soba Master Mr. Yoshinori Shibazaki opened the first Shimbashi Restaurant in Sydney. Partnering with Shiratori Flour Mills of Japan, pioneers in cultivating premium buckwheat in Tasmania, he brought authentic soba-making traditions to Australia.
Grown without chemical fertilizers or pesticides, this exclusive buckwheat is supplied only to select soba restaurants in Japan — and in Melbourne, Shimbashi is the only restaurant honoured with this privilege.
